Dansk Pandekager (Danish Pancakes)

Stephan is the pancake master in our house. This is his mom's recipe.

250 g flour (2 cups)
5 dl milk (2.11 cups)
½ tsp salt
2 tsp sugar
1 tsp vanilla
Stir or whisk above ingredients together. Let rest (with towel over bowl) for ½ hour.
Then add 2 eggs and 3 tbsp oil and stir.
Cook in pan in butter. You know when it's time to flip the pancake when it doesn't stick anymore and it's firm.
I had the best short video of Stephan flipping a pancake, but it wouldn't upload on blogger:-(
(Makes about 4-6 pancakes, depends on how thick you make them, and how big your frying pan is.
Lay one on a plate, coat in your favorite jam or jelly, some powdered sugar. Put a few scoops of vanilla ice cream down the middle and fold both sides in. (this one looks messy because i forgot to take the picture before i folded it up:-) Eat with a fork and knife and you are eating like a Dane:-)

  3. yes, people also spread nutella (chocolate spread) instead of jam on it. that's good too:-)
    low fat.... probably not Mom! Maybe add some fruit.
