buttermilk pancakes

I had some extra buttermilk and had to use it up before it went bad, so I made these yummy pancakes. They taste like they are from a restaurant. Very good:-) I didn't take a picture, plus my pancakes are always shaped weird, but they tasted great!

1 1/2 cup flour
1 egg
1 1/2 cup buttermilk
1/8 cup sugar
1/4 cup veg. oil
1 tsp baking powder
1 tsp baking soda
splash of vanilla
pinch of salt

Mix together and you know what to do next.

It makes a good amount of pancakes (about 12). And it's good with syrup, marmalade (jam), and or powdered sugar. Enjoy!!

  1. to cut down on the fat/sugar, i think you can replace the oil with applesauce, that has always worked for me.
